Last night the tall hormonal kid decided that she needed something to give to the boyfriend for Valentine’s Day. Our family operates like that. If you need something, wait until the last possible moment to announce it. At least we had been warned that there is a boyfriend. The dad is still working on the shock of that.
These cookies are an easy shortcut and make a good impression when the girls have friends over for weekend sleepovers. They look and taste complicated, but they are simple and quick to make – even the tall kid can manage them. She did tell me that I should write the recipe down so that it’s easier to find next time. Next time might even have a little forewarning.
Brownie Mix Cookies
- 1 box of brownie mix (519 grams)
- 1/4 cup + 2 tbsp flour
- 1 cup semi-sweet chocolate chips
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp vanilla
- 3 tbsp water
Preheat oven to 350 F. Lightly grease a baking sheet (or use a silpat on the baking sheet).
Combine brownie mix, flour,and chocolate chips in a bowl. Add in the oil, water and eggs (lightly beaten) and mix together. Drop by spoonfuls of dough 2 inches apart onto prepared baking sheet. I like to roll them into balls and flatten them slightly with a fork. The dough is sticky, so if you are rolling them into balls, you will have to stop and moisten your hands with water occasionally.
Bake in preheated oven until cookies are just set, about 9-10 minutes. Let cool on baking sheets for a few minutes before removing to a wire rack to cool completely.
Wish we operated that way–we wait until it hits crisis mode–wonderful recipe though–anything with chocolate brownie in the name is all good

We probably work best under pressure. The tall kid is just breaking the husband in for the youngest daughter. It’ll be much easier for her.

Good enough, thanks. I’m working on it. I wanted to tell you that we made your mom’s ice box cookies again last week for the big kid’s sleepover party. We made them with mini choc chips and they ate every last one of them. I love that recipe.

My kind of cookies!! I love the last minute stuff, cracks me up. Two of my three are just exactly like that. The soccer player though, he had his big teddy bear and box of chocolates three weeks ago! Seriously, whose kid is that? I think he belongs to motorcycle man, cause they are two peas in a pod, the other two….they are just like me. Poor dad, Boyfriend, sigh…. I mean just sayin. I know motorcycle man will have a different tune when it’s his littlest and only girl.

That’s how it goes, mine are still little. The valentines treat to a girlfriend is currently a roll of lifesavers! ha. I don’t know why. Those COokies i know are delicious! YUM!
I like the idea of a roll of lifesavers. I still give my husband the lifesavers books for Christmas. Very romantic.. Or cheap. Either way, everyone likes lifesavers.

Those cookies look so yummy! I wonder if there is an equivalent to the Brownie mix in the UK. Sounds like a good thing to keep in the pantry for those last minute gifts! I bet the boyfriend liked them! My 8 year old girl only gave Valentine’s cards to her girlfriends and they were all OneDirection type ones! I’m not ready for that boyfriend moment yet, that’s for sure! 🙂
The kid with the boyfriend is also a One Direction fan. The boyfriend days will come soon enough. I’m not sure how the boxes compare between counties, so I put the box weight in the recipe for comparison.
If my husband has anything to do with it, he is not letting her date until she is 30 but the likelihood of that is pretty slim! They grow up way too fast! Thanks for the weight measurement, I think I will take a look the next time I am shopping. 🙂

I’ve made them any time I want something quick. It’s pretty hard to screw these up. The only thing you have to watch is the cooking time. Too long and they are hard, too little cooking and they are too gooey.
Hmm… if these are that good, maybe give some Reese’s hearts to the boyfriends for a few years before treating them to the good stuff. ha. If only it was that easy to hold them off. 🙂
Good idea. Though I like Reese’s hearts just about as much as cookies.
